Roe Pearls & Whipped Goat's Cheese Bites

The superceding cold opener: any roe pearl with real pop over a thick whipped goat's cheese base on seeded crackers.

Ingredients

  • 8 pcsSeeded crackers or rye triangles
  • 100 gGoat's cheeseSoftened
  • 1 to 2 tspOlive oilTo loosen
  • 1 tspCream or creme fraicheOptional, if cheese is sharp
  • 4 tspRoe pearls, kept coldTobiko, kelp, salmon, trout, or caviar
  • FewFresh dill frondsGarnish
  • PinchChives, finely snippedOptional
  • ScrapeLemon zestOptional
  • GrindBlack pepperTo taste

Method

  1. Whip the base. Beat the goat's cheese with olive oil until smooth and just pipeable: thick enough to hold a soft peak.
  2. Taste against the roe. Try a little cheese with a few pearls on it before assembling. Salt nothing.
  3. Assemble. Spoon or pipe a small mound of whipped cheese onto each cracker, then top with a generous spoon of roe.
  4. Finish. Garnish with a dill frond, snipped chives, and a light grind of black pepper. Serve immediately.
Chef's note

Whipped goat's cheese replaces the retired Dijon-lemon mayo base. A tangy, thick base holds the roe pop perfectly.
